Unlocking the Potential of Under-utilised Resources:
Dr. Munira explores the nutritional and functional properties of Brunei's under-utilised resources, such as fish, shellfish, and indigenous plants. By studying protein-lipid and protein-starch interactions, she enhances food quality and functionality, paving the way for innovative applications.
Sustainable Food Product Development:
Her research includes the formulation of insect-based cheese products as a sustainable protein source and creating gluten-free food alternatives from natural ingredients. These projects aim to meet the growing global demand for sustainable, nutritious, and inclusive food options.
Elevating Brunei鈥檚 Traditional Cuisine:
Passionate about preserving and sharing Brunei鈥檚 culinary heritage, Dr. Munira works on enhancing traditional food products for export. She ensures these products meet international standards while maintaining their authenticity, offering a taste of Brunei to the world.
